Specialty Coffee is a classification given to coffee based on a very rigorous grading system implemented by the Specialty Coffee Association. This 100 point scale assesses various attributes of the coffee, including fragrance, aroma, flavor, acidity, body, and aftertaste.
In order to be classified as a “specialty grade,” beans must have zero category 1 defects and no more than five category 2 defects. This ensures a premium finished product every time.
